We have a large evaporator in our sugarhouse which is used to boil the water out of the maple sap. The evaporator boils out 500 gallons of water per hour, Maple sap is about 2% sugar, while maple syrup is 67% sugar. It takes about 40 gallons of sap to make one gallon of maple syrup.When the maple syrup reaches proper density, it is drawn off, filtered, and hot packed for storage. |
