Every spring bright green tips emerge on the boughs of our spruce trees. Harvested by hand, the new growth is cherished for its singular flavor. Our pure Vermont organic maple syrup infused with foraged spruce tips brings together the whole woods. 

 

Try a spruce tip syrup glazed salmon or incorporate it into your favorite baked good recipe. It makes a great substitute in all your maple favorites from adding it to tea or to a fancy cocktail!! 

Every summer wild mint grows along the brook that runs through the back pasture into our sugarbush. Our Whole Woods Mint Infused Maple Syrup is the perfect balance of sweet and fresh. By marrying our maple and mint, we are giving you the essence of summertime on our hill farm.

 

Great on desserts, over ice cream, or in mixed drinks!

 

This new infused syrup was inspired from attending Food Loves Tech Expo in NYC. Baird Farm’s Jacob Powsner attended the expo through The Vermont Fresh Network's Conference Program.* With the conference theme being the "Future of the Cocktail." Handcrafted in small batches, this foraged mint infused maple syrup was dreamt up to reflect the modern bar: flavor-forward, sustainable, and a return to the land. From a Julep to a Pimm's Cup, this syrup will elevate any cocktail with a touch of summer in Vermont.

Cocktails

W  I  L  D   W  I  N T  E  R     C  O  C   K  T  A I  L

1.5 oz Quality Gin (We prefer Silo Gin)

 

1.5 oz The Whole Woods Spruce Tip

 Infused  Maple Syrup

 

4 oz Champagne of choice

 

Sprig Spruce for garnish 

 

A Few Cranberries for garnish

1. Use a cocktail shaker with ice

to combine gin and maple syrup

2. Pour into a cocktail glass

    and top off with champagne

    or seltzer water

 

 

3. Garnish with spruce sprig

    and cranberries. Enjoy!

2.5 oz of Silo Gin 

1 oz Baird Farm The Whole Woods

Mint Infused Maple Syrup

1 oz Lime Juice

Sparkling Water 

1. Combine Silo Gin, Mint Infused Syrup and

Lime in a shaker with ice and shake well. 

2. Pour over ice in your choice of cocktail glass

3. Top with sparkling water

4. Garnish with Lime and mint sprig 

5. And now let the "Wild Rumpus Begin" !
